Pizza night (read: my favorite night) usually occurs on Friday at our house. To my demise, most pizzas are loaded with unhealthy ingredients and carbs. I dream of the days I can whip up a tasty, Pinterest-worthy, healthy pizza crust. But let’s be honest, after working a full week and picking up my son from daycare, I don’t have the time or energy for another epic Pinterest fail. Enter the Pizza Pepper! Can you hear the angels singing? This healthier version of pizza night is super easy, customizable, gluten-free, low-carb, and keto. Pizza party on sans guilt!

Ingredients
- 4 bell peppers, any color
- 1 small yellow onion, chopped
- 1 lb. Italian sausage, ground
- 14 oz. pizza sauce
- 1-2 cups mozzarella cheese, shredded
- 1 small package pepperoni, mini
- 1-2 Tbsp olive or avocado oil
- salt and pepper, to taste
- Optional: black olives, mushrooms, pineapple, or other toppings
Instructions
- Preheat oven to 350.
- Wash and slice bell peppers lengthwise.
- Place peppers on a baking sheet, brush with oil, and bake for 15-20min or until tender.
- Brown sausage in a large skillet over medium heat. Drain. Add onions and cook until tender. Reduce heat to low and mix in pizza sauce. Season with salt and pepper.
- Top peppers with sausage mixture, cheese, mini pepperoni, and optional toppings.
- Bake for an additional 10-20min or until cheese is melted and toppings are cooked. Bake times will vary depending on toppings chosen.
- Caution: peppers will be very hot! Let cool and enjoy!
